With the temperatures quickly cooling down, this deliciously spiced treat is sure to warm up your home (and your belly)! This classic recipe was first featured in our 1986 Here’s What’s Cooking in Your Royal Neighbors of America Kitchens! cookbook. and may become a favorite holiday tradition.
Cake Ingredients
2 ½ cups flour
1 ½ tsps. baking soda
1 tsp. ginger
½ tsp. ground cloves
¼ tsp. salt
1 cup molasses
½ cup vegetable oil
1 cup hot water
Cream Cheese Frosting (see recipe below)
Cake Instructions
Mix flour, baking soda, cinnamon, ginger, cloves, and salt in an 8 or 9 inch square pan with a fork. Add molasses, vegetable oil, and water. Thoroughly blend all ingredients with a fork. Bake in a preheated 350° F. oven for 35-40 minutes or until toothpick inserted in center comes out clean and cake pulls away from sides of pan. Cool in pan on rack. Spread with Cream Cheese Frosting. Makes 9 servings.
Frosting Ingredients
1 3-oz pkg. cream cheese, softened
1 ½ cups confectioners’ (powdered) sugar
Frosting Instructions
Use an electric or stand mixer, add cream cheese to bowl. With mixer on low, gradually add powdered sugar and vanilla until completed combined. Beat until creamy, well-mixed, and lump-free. Frost the Gingerbread Cake once it has completely cooled.
