Broccoli Salad

Originally featured in our 2001 Cooking Time Royal Neighbors Cookbook, this recipe comes from one of our Illinois Royal Neighbors Camps (Chapters), bringing a classic Midwestern favorite to your table. This is a quick and easy side dish is sure to be a hit at any family gathering or work potluck!

Ingredients
1½ cups mayonnaise
½ cup sugar
1 tbsp. vinegar
1 bunch broccoli, washed, died, and cut into pieces
6 or 8 slices of bacon, fried crisp and crumbled
Raisins, as many as desired
Sunflower seeds, as many as desired
Red onion slices, as many as desired

Instructions
Mix the mayonnaise, sugar, and vinegar together. Add the remaining ingredients, mix, and refrigerate for a few hours to let all of the flavors blend together.

How to Make this Recipe Lighter
– Use light mayonnaise or one made with olive oil.
– Using pre-cooked bacon will save fat, calories, and time.
– Use a sugar substitute instead of sugar. We recommend checking the specific brand’s guidelines for proper conversion, as measurements may vary depending on the type of sugar substitute used.
– Use honey or agave nectar instead of sugar. Both are sweeter than sugar, but not by the same amount, so different measurement adjustments are needed when substituting either for sugar.
