Ingredients
2 cups all-purpose flour
1 cup sugar
1 Tbsp. baking powder
½ tsp. salt
1 cup mashed, ripe bananas (about 2 medium)
⅓ cup milk
⅓ cup peanut butter
3 Tbsps. vegetable oil
1 egg
1 cup milk chocolate morsels, divided
Optional Ingredients
⅓ cup peanuts, chopped
¼ cup milk chocolate morsels, divided (in addition to the 1 cup above)
Preheat oven to 350° F. Spray bottom only of loaf pan with nonstick cooking spray. Combine flour, sugar, baking powder, and salt. Combine bananas, milk, peanut butter, oil, and egg in a small bowl. Mix until moistened. Stir in the chocolate morsels. Spoon batter into pan. If using optional ingredients, using a food chopper, coarsely chop peanuts, then sprinkle chopped peanuts and ¼ cup of chocolate morsels evenly over batter. Bake 60 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. Loosen sides of loaf from pan. Remove bread from pan to cool, so bottom will not stay moist. Makes 1 loaf, 12 servings.
