Broccoli-Corn Bake

Need a quick and delicious side dish for your next holiday gathering? Our Broccoli-Corn Bake is sure to be a crowd-pleaser! With little prep work and lots of flavor, this tasty recipe not only pairs well with any main entrée, it compliments the other sides, too. No wonder why it was included in our 1994 Serve Yourself Potluck with these recipes from Royal Neighbors Kitchens of America cookbook.

Ingredients
1 10-oz. pkg. frozen chopped broccoli, thawed
2 17-oz. cans cream-style corn
¼ cup saltine cracker crumbs
1 beaten egg
2 Tbsps. butter
1 Tbsp. instant/freeze dried minced onions
Dash pepper
¼ cup round butter cracker crumbs
3 Tbsps. butter, melted

Instructions
In a 1½-qt. casserole dish, combine thawed broccoli, corn, ⅛ cup saltine cracker crumbs, ⅛ butter cracker crumbs, egg, 2 Tbsps. butter, and pepper. Blend remaining crumbs and 1 Tbsp. butter, sprinkle over top. Bake at 350° F. for 45 minutes. Makes 6 to 8 servings.

How to Make this Recipe Lighter
– Use light butter or margarine.
– Use unsalted saltine crackers.
– Use reduced fat round butter crackers.
