Add a new favorite to your dessert table this holiday season. Our Eggnog Pie recipe is bursting with festive flavor. This delicious treat has been making memories sweeter since 1960, when it was featured in our Favorite Recipes Royal Neighbors Cookbook from a Missouri member.
Ingredients for Pie Filling
2 tbsp. gelatin soaked in 3 tbsp. water
1 cup milk or eggnog
2 egg yolks beaten
½ cup sugar
½ cup whipping cream
Dash of flavoring (vanilla or nutmeg)
2 egg whites beaten stiff
Instructions for Pie Filling
Scald milk or eggnog; add egg yolks beaten with sugar and cook until the mixture coats a spoon. Remove from fire, add gelatin, add flavoring, and allow to cool. When perfectly cool, fold beaten egg whites and cream which has been whipped.
Ingredients for Pie Crust
1 cup graham cracker crumbs
⅓ cup butter
2 tbsp. sugar
Instructions for Pie Crust
Combine 1 cup graham cracker crumbs with ⅓ cup butter and 2 tablespoons sugar. Press into pie tin and bake 5 minutes in hot oven. Pour the cooled filling into this shell and sprinkle a few graham cracker crumbs on top. Place in the refrigerator to congeal. Chill for at least 2 hours before serving. This allows the pie to set properly. You can garnish with whipped cream and a sprinkle of nutmeg for extra flavor. This pie may be made a day in advance of serving.
