Hundred Dollar Cake

This recipe was published in 1960 in Favorite Recipes from Royal Neighbor Kitchens. The foreword begins with, “There is a bond of fellowship between all good cooks.” And ends with, “Royal Neighbors of America is dedicated to the home and family, as its twofold service provides sound life insurance and true fraternal activities for men, women, and children.”

Hundred Dollar Cake 

2 cups flour
1 cup sugar
1 ½ tsp. baking powder
1 ½ tsp. baking soda
4 tbsp. cocoa
1 cup water
1 cup salad dressing
2 tsp. vanilla

Sift together dry ingredients and add water, salad dressing, and vanilla in that order. Bake in two greased 8-inch layer cake pans for 30 to 35 minutes (or until done) at 350 degrees.

Fudge Icing

1 cup sugar
¼ cup cocoa
¼ cup margarine
¼ cup milk
2 tsp. vanilla

Cook all ingredients but vanilla to the bubbling boil stage and continue to boil for one minute. Add flavoring and remove from the fire to cool slightly.
