Pizza Meatloaf

Here’s a fun twist on a classic recipe for the kids! Originally featured in our 1986 cookbook, Pizza Meatloaf offers a unique blend of the best parts of pizza (the toppings!) and a timeless comfort food (meatloaf). This dish can be customized with different pizza toppings, adding variety to your home menu while pleasing the pickiest of eaters.

Ingredients
2 lbs. hamburger
1 cup cracker crumbs
½ cup chopped onion
2 eggs slightly beaten
½ cup grated Parmesan cheese
1 ½ tsps. salt
1 Tbsp. oregano
1 cup milk
1 10 ½-oz. can/jar pizza sauce
1 cup Mozzarella cheese

Optional Ingredients
Add your favorite pizza toppings, such as ½ cup chopped green pepper. Pepperoni can be added to the top of the dish before baking.

Instructions
Mix first eight ingredients together and bake 1 hour at 350° F. Remove from oven and remove the grease. Pour pizza sauce and Mozzarella cheese over top. Bake 10-15 minutes more.

How to Make this Recipe Lighter
– Use lean ground beef.
– Use low carb cracker crumbs.
– Use reduced-fat grated Parmesan cheese.
– Use skim milk.
– Use a low calorie, unsweetened, or low carb pizza sauce.
– Use reduced-fat Mozzarella cheese.
– If adding pepperoni or sausage, use turkey pepperoni/sausage.
